The Social tab in your menu shows your current relationship with each villager.
Heart Meter
Each person shows a row of 10 hearts indicating your relationship with them. If you're married, your spouse will have 12 hearts instead.
The hearts will fill up or decrease over time as you talk to people and gift them. You can give each person up to 2 gifts per week, as indicated by the checkboxes to the right of their entry in the social tab. Each heart represents 250 friendship points. Speaking to a villager gives 20 points once per day, while ignoring them for a day gives -2 points, so don't ignore your friends!
Each villager has their own individual likes/dislikes. The more they like a gift, the more invisible points you will get towards filling in a heart; A loved gift is worth 80 points and a liked gift is worth 45. Be careful, as gifting someone something they hate can also cause hearts to go down.
Successfully completing a quest that states it will make the villager happy is worth 150 friendship points immediately on turn-in.
Giving a villager a loved gift on their birthday nets you 640 friendship points (8x the value of a loved gift on a normal day) - it pays to keep some prismatic shards or rabbit's feet around for those hard to please types. Even a liked Birthday gift will net you 360 friendship points, so keeping an eye on the calendar helps. It is important to note that the Birthday gift does NOT count toward the weekly limit of two gifts. This means that you can give that person three gifts that week. You have to give the two normal weekly gifts first, though.
You can also reach 10 heart (best friend status) with every villager prior to marriage, and giving bouquets to multiple villagers doesn't render any repercussions. It's a favourite strategy for some players as they are able to see all or most cutscenes with each villager before being married.
Heart Events
If you are using mods that allow you to increase your affinity towards players, it is possible to view heart events out of order. If you do not want to view heart events out of order, don't increase your affinity for one person by more than 2 hearts without first encountering a heart event.

Below are lists of items that are universally loved or hated. Note that there are some exceptions and that individual villager tastes override any universal tastes.

Universal Loves
This is a list of items that every villager absolutely loves to receive as a gift. These items are guaranteed to give the most points (80) towards your relationship, but may be difficult to obtain.

Universal Likes
Though worth less friendship points than a loved gift, liked gifts (45 points) are much easier to fulfil. As there are many ways to go about procuring such gifts, their open-ended nature lends itself to 'one gift to woo them all.'

- All Cooking (Except universally neutral foods, which are Fried Eggs, Bread, Wheat, and Hops)
- All Artisan Goods (Except for Pine Tar and Oak Resin, which are universally disliked)

- All Flowers
